For the longest time, I thought foil was just part of grilling.

If I wanted vegetables, shrimp, potatoes, or anything small enough to fall through the grates, I would make a little foil packet and put it on the BBQ.

It was easy. It kept everything together.

But after a while, I started noticing that “easy” didn’t always mean better.

The food wasn't getting the same char. Cleanup was still annoying. And I was going through a surprising amount of foil just to cook things that should have been simple.

So I decided to stop using foil for those foods and try a different approach.

1. I Wanted My Food To Actually Taste Grilled

This was the first thing I noticed.

When you wrap vegetables or shrimp completely in foil, you're creating a closed environment around the food.

Instead of being directly exposed to the grill, the ingredients cook inside the packet with all that heat and moisture.

That's fine when you're looking for something steamed.

But when I fire up the BBQ, I want those smoky flavors and browned, charred edges that make grilling worth it.

I wanted my vegetables to taste like they came off a grill, not just happen to have been cooked on one.

2. I Was Tired Of Losing Food Through The Grates

The other option wasn't exactly perfect either.

Put chopped vegetables directly on the grill and you have a different problem.

Small pieces have a habit of finding the smallest possible gap and disappearing through it.
